Why I Love this Salad Recipe
Here’s the top 4 reasons why I love this salad:
- It’s Easy Peasy: This recipe starts with a prechopped mixed broccoli slaw: easy. It takes only about 5 minutes to whip up: quick. It includes ingredients that shouldn’t be too difficult to find: simple!
- It’s Vegan!: As a vegan identifying person, I can appreciate that no animal parts or secretions are in this recipe!
- It’s Nutritious: This veggie packed salad comes packed with vitamin C, beta carotene (a antioxidant and precursor to vitamin A), fiber(1), and healthy fats -from the canola oil and sunflower seeds!
- It’s Delicious: I mean, I think it’s quite tasty (and some folks who’ve tried it have said they enjoy it too!). I’d best describe this one as sweet and tangy
Oh, can I mention something else ( I guess, this makes #5)?
It looks quite festive, perfect for fall and cold weather months, yet, it’s light and spring like.
So I guess it’s fitting for any season! 😊
Is Broccoli Slaw Actually Coleslaw?
Heard of coleslaw but not broccoli slaw? That makes sense!
I thought they might be the same thing, but they aren’t.
A main ingredient in both of these slaws is different.
For broccoli slaw, it’s usually broccoli stems that have been shredded, and for coleslaw, it’s typically shredded cabbage.
Both slaws are similar in that they may also contain other shredded veggies – such as shredded carrots and red cabbage.
Recipes typically include a dressing. And this is where folks can get really creative!

Ingredients
As depicted above, the ingredients in this recipe probably aren’t too unfamiliar!
- Broccoli Slaw Mix: Save time by getting a mix that already includes the shredded broccoli, carrots and red cabbage!
- Canola Oil: I like to use this oil because of the neutral flavor.
- Sunflower Seed Kernels, unsalted
- White Vinegar: Adds some twang to the recipe!
- Craisins (50% Less Sugar) Dried Cranberries: Sweetness and color
- Garlic and Onion Powder: To spread a bit of savory throughout the salad.
- White Sugar: to spread a little sweetness throughout the salad
- Bragg Liquid Aminos (optional): Adds some umami flavor!
Instructions (with Pictures)
Put the broccoli slaw in a large bowl, and the wet and dry seasoning ingredients into a separate smaller bowl.
Mix the dressing ingredients thoroughly.
Stir the sunflower seed kernels and Craisins into the dressing.
Combine the wet mixture with the broccoli slaw
Yumminess prepared!
FAQs
The day it is made! Like many other salads with the dressing already on, this one can get a bit soggy after it’s been sitting in the fridge for a 2-3 days.
This vegan broccoli slaw is a nice side dish! If you want incorporate it into a meal, consider adding a more protein containing or high protein food depending on your needs (here’s a handy vegan list of high protein foods!), and carbohydrate rich foods.
Great question! It’s easy for the dressing to slide to the bottom of the salad, so I think that coating the Craisins and sunflower seed kernels with the dressing first helps it to stick to the toppings easier, so that (hopefully!) less dressing sinks to the bottom.
